USUCT SEI Professor Svitlana Bukhkalo Gave an Open Lecture on Fat Substitute Technologies

On September 17, 2026, an open lecture by Svitlana Ivanivna Bukhkalo, Candidate of Technical Sciences, Associate Professor, Senior Researcher, Professor of the Department of Technologies of Natural and Synthetic Polymers, Fats and Food Products, was held at the SEI “Ukrainian State University of Chemical Technology”.

The open lecture entitled “Chemistry and Technology of Fat Substitutes Based on the Analysis of Fatty Raw Materials” was held in the format of a Zoom conference for fifth-year students as part of the discipline “Modern Fat Substitute Technologies”.

During the lecture, the main attention was focused on the chemical and technological principles of obtaining fat substitutes from plant raw materials. The students considered approaches to selecting a production method, taking into account the properties of the raw materials, their availability in Ukraine, the intended use of the finished product, as well as technological and economic feasibility.

A separate part of the lecture was devoted to the analysis of the processing and storage of fat-containing products. Svitlana Bukhkalo considered the main functions of lipids and their importance in forming product properties, and also demonstrated the connection of the topic with the previous and subsequent sections of the discipline.

The theoretical material was supplemented with examples of experimental studies. In particular, the students analyzed the determination of the response surface of the crystallization temperature and the assessment of the yield of wax-like components based on the experimental results. This approach made it possible to trace how experimental data are used to select technological parameters and substantiate process conditions.

A practical example was also the development of a formulation for a hygienic lip balm and a functional diagram of its production. Using this example, the students considered the sequence of the transition from analyzing fatty raw materials and the properties of individual components to developing the formulation and constructing the technological scheme of the finished product.

More than 20 participants took part in the open lecture. The session was held in the form of an active discussion, during which the participants discussed technological solutions, the specifics of using different types of raw materials, and the practical application of theoretical principles.

The combination of theoretical foundations, analysis of experimental data, and consideration of specific technological examples enabled the students to gain a deeper understanding of the logic of product development — from studying the properties of raw materials to selecting a technological solution and constructing a production scheme.
